I always love a challenge. So when FoodBuzz sent out an opportunity for its Featured Publishers to participate in a recipe contest, I jumped at the chance. The challenge was to create a unique recipe featuring any type of Nature’s Pride bread. I was thrilled to receive a coupon for a free loaf to try.
Nature’s Pride offers a wide variety of bread options and seems to be readily available in most of my local grocery stores. Since I decided to make a dessert for my entry, I opted to try their Stone Ground Whole Wheat with Honey variety. My goal was to figure out a way to showcase the nutty flavor of the bread while using it in a unique way.
The last thing I wanted to do was make a bread pudding. I figured there would be a ton of entries using that approach. So I decided to try putting a unique spin on the classic Apple Brown Betty. Instead of a long baking time, this recipe is quickly made on the stovetop. It is a perfect dessert when you need something that is quick, easy and delicious.
Stovetop Apple Brown Betty
4 slices Natures Pride Honey Wheat Bread
3 Tbl. butter
½ tsp. cinnamon
Cut the bread slices into ½ inch cubes. Melt butter in a large sauté pan over medium heat. Add the cinnamon and bread cubes to the butter. Toss constantly over medium heat for 2-3 minutes, or until the bread cubes is lightly toasted. Remove from the pan and continue to the apple filling recipe.
4 medium Gala apples, peeled & cored
2 Tbl. butter
¼ cup brown sugar
1 ½ tsp. cinnamon
¼ tsp. nutmeg
1 Tbl. fresh lemon juice
¼ cup apple cider
Using the same sauté pan as the bread steps, melt butter over medium heat. Add remaining ingredients to the pan. Cook the apple mixture over medium heat for 10-12 minutes, or until the apples are tender. Toss in the toasted bread cubes in the apple mixture. Continue tossing over medium heat for 1 minute. The liquid will be absorbed in the bread and the mixture will thicken.
Serve warm with whipped cream. Serves approximately 4-5 people.
