Stovetop Apple Crisp

What can be more comforting than a dessert made with apples? From pies, to tarts, crostatas and even crisps; apples are clearly my universal go-to fruit for a tasty dessert for a dinner party. The best part is I have yet to find anyone who will turn down something filled with apple goodness.

My interest in turning my oven on decreases dramatically as the weather begins to get warmer. But that doesn’t stop me from wanting to wrap myself up in sweet apple comfort. So when I came across this recipe for a stovetop variation of the classic crisp recipe, I couldn’t help but give it a try.

The recipe is definitely a good alternative to the classic, but it is certainly no replacement. Expect a quick preparation, simple ingredients and good flavor. The final product reminded me more of grilled apples with a crisp topping rather than a traditional apple crisp. But it is definitely worth giving it a try.

Stovetop Apple Crisp
Adapted from Cuisine Tonight Menus

Crisp Topping:
3 Tbl. butter
½ cup blanched almonds, sliced
1/3 cup rolled oats
¼ cup brown sugar

Melt the butter in a medium nonstick sauté pan over medium high heat. Stir in the almonds, oats and sugar. Cook while stirring constantly for 3-4 minutes, or until lightly browned. Pour the mixture onto a sheet of parchment paper. Spread evenly to create a single layer and set aside to cool.

Apple Filling:
3 gala apples, peeled and sliced
2 Tbl. butter
3-4 Tbl. sugar
½ Tbl. lemon juice
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
pinch of salt

Sauté the apples in a medium sauté pan over medium heat for 5 minutes or until softened. Add the sugar, lemon juice and cinnamon. Reduce the heat and simmer for 1-2 minutes until slightly thickened. Evenly divide the apples into bowls. Break up the crisp topping and sprinkle on top of the apples. Top with whip cream. Serves 3 – 4 people.
