Tomato Salad with Farmer’s Cheese

Riding high on my new farmer’s cheese making abilities, I decided to toss together an easy salad for a small gathering of friends. This simple treasure is not only lovely to eat, but wonderfully beautiful at the same time. Be sure to take advantage of all the tasty tomato varieties at the farmers market. Before you know it, the season will be over and we will get stuck with root vegetables for 6 months of winter.

Tomato Salad with Farmer’s Cheese

Serves: 4-6 people
  • 1 pint cherry tomatoes, halved
  • 1 cup crumbled farmer’s cheese, or feta
  • 6-8 large fresh basil leaves
  • 1 Tbl. balsamic vinegar
  • 1 Tbl. extra virgin olive oil
  • salt and pepper
  1. Cut the basil leaves into small strips. Whisk the balsamic vinegar and olive oil in a small bowl to make vinaigrette for the salad.
  2. Toss the tomatoes with the crumbled cheese and basil.
  3. Pour into a serving dish and drizzle the vinaigrette on top.
  4. Season with salt and pepper.
